I'm going to have to ask you all to be patient while I try to get the recipe from the hotel chef in question. It was the most exquisite salad dressing I've ever tasted - sharp, sweet, sour and almost fizzy. Watch this space!

Do we need to be patient, or can we contribute our own guesses as to how to make purple vinegar? My money's on those purply-red onions leaking their colour in somehow ... (but I'm no cook, just an avid eater!) Other ideas???
