I didn't either, until a trip to the Tirol last year. It was astonishing - absolutely everything was organic, the presentation was stunning and the flavours amazing. Forget about dumplings and heavy stews - this was light, gourmet food like I'd never tasted and it was available everywhere we went. It's something the Austrians ought to shout about more.
